6 heart-shaped Stetsons burger patties
6 Black mushrooms
50ml Olive oil
2 cloves garlic, chopped
12 Tomato slices
200g Mozzarella cheese, cut into thick slices
100ml Basil Pesto
Fry the burger patties and the mushrooms, set aside and keep warm.
Cut the ciabattas in half, and brush with olive oil on the insides.
Spread over some chopped garlic and toast the insides over an open toasted
Once toasted, place a handful of rocket and two slices of tomato on one half of every Ciabatta.
Place the hot Stetsons burger patty on top, followed by the hot mushroom (to melt the cheese).
Then add slices of Mozzarella cheese.
Finish the burger off with a table spoon of Basil pesto, and close with the top-half of the Ciabatta.
Serve with thinly sliced deep-fat fried vegetable crisps (beetroot, carrots & sweet potato)
