Smoked slow cooked pork belly

INGREDIENTS

  • 100g Crown Fresh Pump NF
  • 1.5L Ice Cold Water
  • 1 Pork Belly

 

 

METHOD

 

  1. Mix Crown Fresh Pump with Ice cold water.
  2. Weigh the meat.
  3. Inject 10 – 15% brine into water.
  4. Prepare your smoker.
  5. Dry meat in smoker for 30 mins.
  6. Prepare wood chips (slightly damp) and insert into smoker.
  7. Smoke meat for approx. 3 hours.
  8. Remove meat from smoker.
  9. Slice off the bone.
